Celery, Red Pepper, Green Onion Potato Salad

  • 12 red potatoes- well scrubbed
  • 4 celery stalks-chopped
  • 1 red pepper-chopped
  • 5 green onions-chopped
  • Juice of 1 lime
  • ½ cup mayonnaise
  • ½ cup plain yogurt
  • 1 cup sour cream
  • ½ tsp. black pepper
  • 1 tsp. garlic salt
  • 1 tsp. seasoned salt
  • ½ tsp. paprika
  • ½tsp. cayenne pepper
  • 1 tsp. dill weed
  • 3 hard boiled eggs

Boil potatoes in large pot until tender. Drain and chop into 1 inch cubes. Place chopped celery, red peppers and green onions into large bowl with potatoes. Mix together all spices and wet ingredients to create dressing. Add chopped egg to bowl. Pour dressing over all ingredients and mix well. Refrigerate.
